Carl Caspar von Siebold wurde von seinem Vater zwei Jahre lang in derChirurgie ausgebildet. Er war Feldarzt in französischen Spitälern undübernahm 1760 die Assistentenstelle bei dem Oberwundarzt Stang imJulius-Hospital in Würzburg. Ernennung 1769 zum ordentlichen Professor fürAnatomie, Chirurgie und Geburtshilfe durch Fürstbischof Adam Friedrich Grafvon Seinsheim, nachdem Carl Caspar von Siebold 1766 seine Arztpraxis inWürzburg eröffnet hatte. 1801 wurde er in den Reichsadel erhoben.
